Best Waffles

Pantry
  • 2 2/3 c flour
  • 1 tsp salt
  • 4 tsp baking powder
  • 2 tbsp sugar
  • 2 c milk
  • 1/2 c fat
  • 4 lg eggs, separated

  1. Mix and sift dry ingredients.
  2. Add egg yolks and fat (oil) to milk. Add to dry ingredients and beat until smooth.
  3. Beat whites of eggs (stiff peaks) and fold in last. Makes four large waffles.
  4. Heat waffle iron until it snaps with a drop of cold water. Put a tbsp of batter in each compartment and tablespoonful in the center of the iron. Allow 4-5 mins to a waffle. Serve with syrup and butter while crisp and hot.
