Best Waffles

Pantry
- 2 2/3 c flour
- 1 tsp salt
- 4 tsp baking powder
- 2 tbsp sugar
- 2 c milk
- 1/2 c fat
- 4 lg eggs, separated
- Mix and sift dry ingredients.
- Add egg yolks and fat (oil) to milk. Add to dry ingredients and beat until smooth.
- Beat whites of eggs (stiff peaks) and fold in last. Makes four large waffles.
- Heat waffle iron until it snaps with a drop of cold water. Put a tbsp of batter in each compartment and tablespoonful in the center of the iron. Allow 4-5 mins to a waffle. Serve with syrup and butter while crisp and hot.
